Led by experienced chef-trainer, Stephen Lunn, this hands-on course combines demonstration with practical experience to build your confidence and precision in the kitchen. You'll learn the essential techniques behind selecting, handling, sharpening, and maintaining your knives for both safety and efficiency.
 
The course emphasizes practical application, allowing attendees to practice techniques in a supportive environment.

Cruise Guide Burnie

Ready to welcome cruise visitors to Burnie? This free Tasmanian Hospitality & Tourism Academy (THTA) course is for you.
Whether you're a volunteer, casual guide, or someone looking to get involved in supporting the cruise season, this one-day course will give you the tools and confidence to deliver a warm, safe, and memorable experience for passengers.
Led by Specialist Industry Manager from the Tourism Industry Council Tasmania, Larni Davies, and in partnership with WxNW, TasPorts and the Burnie City Council this free session is tailored specifically to the Burnie cruise season, with practical tips, local insights, and real-world scenarios to help you feel prepared and supported in your role.


What you'll learn:
 
  • The unique role of cruise shore-ex guides and how it differs from regular touring
  • Passenger profiles – who they are, what they expect, and how to impress
  • Group and time management essentials (headcounts, schedules, mobility needs)
  • How to tell great local stories without information overload
  • Burnie’s key highlights, hidden gems, and seasonal talking points
  • How to handle tricky questions, complaints, and cultural misunderstandings
  • The course is interactive, friendly, and will help you provide visitors with a quality experience. 

You’ll also receive handy take-home resources – including FAQs, safety tips, and maps – plus the chance to connect with others getting ready for the cruise season.

The school will run every Wednesday from 4pm until 8.30 pm in central Hobart. Perfect for those already studying or working and wanting to get into cookery in Tasmania or those just looking to up your kitchen game at home.

FACE TO FACE: Provide Responsible Service of Alcohol (RSA)

THTA has partnered with the Queensland Hotels Association (RTO 30826) to provide a nationally recognised face to face training program for SITHFAB021 Provide Responsible Service of Alcohol (RSA). The training program is offered face to face for those who are involved in the sale and supply/service of alcohol according to relevant Tasmanian regulations. The training focuses on the performance outcomes, skills, and knowledge necessary for the responsible sale, service, or supply of alcohol.

This immersive program gives you hands-on experience in hotel operations, customer service, and essential front-line skills—all guided by industry pros. Perfect for aspiring hoteliers and those ready to thrive in luxury hospitality. 

The school will run every Tuesday from 4.00pm until 8.30 pm in central Hobart.  Perfect for those already studying or working but looking to get involved in Tasmania’s fabulous and growing local and international hotel scene.

Housekeeping 101: The Essentials
